Fellow student here, not associated with PGS (apart from being a customer). If you can play it fast, you can play it slow™. I am not aware of any software that does what you are asking for natively. The closest thing I could think of is MuseScore. It is open source music composition software that (with plug-ins) might be able to do what you are asking. I tried it a while back with the Hanon exercises and was never able ...

Well... on the sheet music they will move around, when the clef changes, but that's again: not rookie levelRemember, the keys on the piano and the notes on the sheet music aren't moving around while you play.
