Bob Seger piano just has that rock rhythm to it that everyone instantly recognises.

In addition to the famous Against the Wind (playing that song through, solo and all, is on my piano bucket list), at least half of the Stranger in Town album would be great transcribed. We've Got Tonight was already suggested, but Brave Strangers has a fantastic rock beat to it. However, my absolute favourite Seger song from a piano perspective has to be the power ballad that ends that album, The Famous Final Scene. Verse and chorus are fairly easy, and the two piano solos aren't particularly complex - I think it would be a great intermediate-level song.
