I played piano for several years and then took a break because of college. When I was little, my goal was (which I accomplished partway through those several years) was to play Fur Elise.

Now I'm getting back in to try to get better and better, and my new goal is to be able to play Chopin's Ballade No. 1 in G minor.

It's a really difficult song, but that's why it's such a great milestone for someone trying to learn how to fly across the piano while still being lyrical and emotive.

...Someday I hope to get there :D

(On a slightly different note but related to playing technically challenging pieces, as someone with not gifted with large hands, I've always wanted to know how to handle chords that spanned larger than an octave.)
